Spicy tomato stew with pepper paste

Method
Crush Sahar whole peeled tomatoes with a spoon so they stay chunky, not puréed. Tukas red pepper paste gives color and heat. For extra fire, a few drops of Sahar jalapeño sauce at the end is enough. Onion stock shortens the usual onion fry. Spoon it over bread, next to eggs, or onto plain rice.

Warm the oil and fry the pepper paste 30 seconds until the color blooms.

Add the tomatoes with their juice and crush them with a spoon.

Stir in onion stock and simmer 12–15 minutes until thick.

Add thyme, and jalapeño sauce if you want more heat.

Cook 1 minute more, taste, then take off the heat.

Serve hot with bread or over rice.
